A fillet trimmed at 50 % costs twice as much, not half as much again. The dish looks profitable when it isn't, and the error produces a perfectly plausible number.

Cost divides by yield; it is never multiplied by the loss. Across three levels — ingredient, prep, dish. Automated tests verify it, precisely because a mistake here is invisible.

In pack sizes

A case price compared with a kilo price means nothing. A supplier who changes format can raise the price while appearing to lower it.

Every line is brought back to its base unit — 12 bottles of 0.75 L make 9 litres, a 2 × 5 kg makes 10 kg. It is the only way to compare two prices, and therefore to see a rise.

Frequently asked questions

How long before this is useful?
The first invoice you upload already gives you converted purchase prices and delivery gaps. The P&L needs your evening takings — ten seconds a day. Actual usage waits on two end-of-month stocktakes, so two months. Nothing requires you to enter everything before starting.
What is food cost, and how do you calculate it?
It is the share of raw materials in the selling price. Margéo calculates it on your real purchase prices, read from your invoices and brought back to the base unit, including trim losses — cost divides by yield, it is not multiplied by the loss. An end-of-month stocktake then takes you from theoretical to actual usage: opening stock + purchases − closing stock.
Do I have to change my till system?
No. Sales import from a CSV file, the one your till already exports. A direct connector is being considered; tell us which system you use, that is what will decide the order.
What happens if the AI misreads an invoice?
It is flagged “to review” and you correct it by hand. The system checks its own consistency — total against the sum of lines, plausible VAT — and reports what looks wrong rather than swallowing it silently. A price you confirm then overrides any automatic reading.
How do you check a delivery?
You photograph the delivery note. Margéo finds the matching invoice, compares quantities and prices line by line, and prices the gap in euros at the invoiced price — the only one you can hold the supplier to. Above €5 you get an email; below that, it's rounding.
Which kinds of businesses is it for?
Restaurants, bistros, brasseries, wine bars, caterers — any business that buys raw materials, transforms them and sells them. The product is aimed at independents with one to five sites, those with neither a controller nor time to spend on a spreadsheet.
Is my data isolated from other restaurants?
Yes, and not merely by a clause in a contract: every query to the database passes through a lock that, without identification, returns no rows rather than all of them. The two barriers — application filter and database-side security policy — are set independently. Hosting is in the European Union.
Can I take my data and leave?
Yes. Full export on request, permanent deletion in one click, in line with the GDPR. The P&L exports to PDF, the accounting data as a purchase ledger your firm can import.
Does it replace my accountant?
No, and that is not the aim. Margéo sends them a ready-to-import purchase ledger every month — balanced entries, accounts from the French general chart of accounts. What you gain is knowing where you stand on the 15th of the month rather than when the accounts arrive.
Do I need to install anything?
No. Margéo opens in a browser and installs on a phone's home screen in one gesture. That is where an invoice gets photographed — not in front of a computer.
